Junk Food Cookies

 Potato Chip Cookies (Makes 50 cookies)

Ingredient:

  • 1 cup butter; softened
  • ½ cup sugar
  • 1 egg
  • 1 ½ cup flour
  • 1 tsp. vanilla
  • 1 cup potato chips; crushed
  1. Heat oven to 350°F.
  2. Cream butter, sugar and egg. Add flour, vanilla and potato chips.
  3. Drop by teaspoonfuls onto a parchment lined cookie sheet and press lightly with a fork. Bake for 10-12 minutes and then transfer to wire rack to cool complete.

Root Beer Float Cookies 

Ingredients:

  • 2 ½ cups flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 1/4 tsp. cinnamon
  • 1 cup brown sugar
  • 8 tbsp. butter; softened
  • 2 eggs
  • ¼ cup root beer
  • ¼ cup root beer candy; crushed
  1. Heat oven to 350°F.
  2. Sift together flour, baking powder, baking soda, salt and cinnamon.
  3. In large mixing bowl, cream brown sugar and butter until fluffy. Add eggs one at a time then add root beer. Stir in flour mixture then add root beer candy.
  4. Drop by round teaspoonfuls onto a parchment lined cookie sheet and bake for 8-10 minutes. Cool on wire rack. Top with Root Beer Frosting (recipe below)

Root Beer Frosting 

Ingredients:

  • 2 tbsp. butter; softened
  • ¼ cup vegetable shortening
  • 2 cups icing sugar
  • 2 tsp. root beer
  1. Cream butter and shortening together. Add icing sugar and root beer. Add additional icing sugar or root beer to get the consistency you desire.
