Potato Chip Cookies (Makes 50 cookies)
Ingredient:
- 1 cup butter; softened
- ½ cup sugar
- 1 egg
- 1 ½ cup flour
- 1 tsp. vanilla
- 1 cup potato chips; crushed
- Heat oven to 350°F.
- Cream butter, sugar and egg. Add flour, vanilla and potato chips.
- Drop by teaspoonfuls onto a parchment lined cookie sheet and press lightly with a fork. Bake for 10-12 minutes and then transfer to wire rack to cool complete.
Root Beer Float Cookies
Ingredients:
- 2 ½ cups flour
- 1 tsp. baking powder
- ½ tsp. baking soda
- ¼ tsp. salt
- 1/4 tsp. cinnamon
- 1 cup brown sugar
- 8 tbsp. butter; softened
- 2 eggs
- ¼ cup root beer
- ¼ cup root beer candy; crushed
- Heat oven to 350°F.
- Sift together flour, baking powder, baking soda, salt and cinnamon.
- In large mixing bowl, cream brown sugar and butter until fluffy. Add eggs one at a time then add root beer. Stir in flour mixture then add root beer candy.
- Drop by round teaspoonfuls onto a parchment lined cookie sheet and bake for 8-10 minutes. Cool on wire rack. Top with Root Beer Frosting (recipe below)
Root Beer Frosting
Ingredients:
- 2 tbsp. butter; softened
- ¼ cup vegetable shortening
- 2 cups icing sugar
- 2 tsp. root beer
- Cream butter and shortening together. Add icing sugar and root beer. Add additional icing sugar or root beer to get the consistency you desire.
